Victory Bakers Flour is a high protein flour of 12 to 12.8% protein whereas Maximus Bakers Flour is a  high to medium protein flour of 11.4 to 12% protein.

Victory Baker’s Flour delivers exceptional dough strength, extensibility and consistency across a range of applications including artisan breads and provides additional tolerance for meal and grain breads to maintain shape and volume.

Maximus is ideal for baking a wide range of breads and rolls, however a slightly lower protein content can influence the results in some specific applications.
